    A real party-pleaser! Versions of this recipe abound but what sets this one apart from most is it is served hot from the oven, and has a layer of ground beef. We always called this Supper Nachos but one recipe makes enough for a party appetizer for about 2 dozen people, so cut it down to size for a family dinner!

    Ingredients

    • 1 pound ground beef
    • 1 onion, diced
    • 2 cloves garlic, minced
    • Salt & pepper
    • 2 15-ounce cans refried beans
    • 1 4-ounce can diced green chilies
    • 2 cups shredded Jack cheese - 8 ounces (I used pepper Jack for extra heat
    • 1 cup taco sauce or salsa, or more as desired
    • 1/2 cup sour cream
    • 1 avocado, coarsely mashed (optional)
    • 1/3 cup chopped green onion
    • 1/2 cup sliced black olives
    • Tortilla chips
    • Cilantro sprigs for garnish (optional)

    Directions

    1. Heat oven to 400 degrees F.
    2. Crumble ground beef into large non-stick skillet and cook over medium heat with onions and garlic until meat is browned and onions tender, about 7-8 minutes. Drain if needed. Salt and pepper lightly.
    3. Spray a 9 x 13-inch baking dish with vegetable spray and spread refried beans smoothly on bottom.
    4. Spoon beef-onion mixture evenly over refried beans. Spread green chilies over meat, then cover evenly with cheese.Drizzle taco sauce evenly over all.
    5. Bake uncovered for 25 minutes or until very hot throughout. Remove from oven and allow to cool down slightly, about 5 minutes.
    6. Spoon sour cream in small mounds over the top, then sprinkle with avocado, olives and green onions. Serve at once with cilantro sprig garnish and tortilla chips.
    7. Serves 24 appetizer-size helpings or 8-10 dinner-size servings.
