Laura Goodenough's Apple Coffee Cake
Ingredients
- 6 McIntosh apples, pared, cored, sliced (3 c.)
- 5 teaspoon cinnamon
- 1 teaspoon salt
- 1 c. salad oil
- 3 c. flour
- 1 T vanilla
- 2 T + 1 1/2 c. sugar
- 3 teaspoon baking pwdr
- 4 large eggs
- 1/4 c. orange juice
Directions
- Preheat oven to 375 degrees. Put together apples, 2 tbsp sugar and cinnamon and set aside.Sift flour, remaining sugar, baking pwdr and salt into large bowl. Make a well in the center and pour in oil, large eggs, orange juice and vanilla. Beat with wooden spoon till well blended (batter will be very thick). Spoon 1/3 batter into 9 or possibly 10 inch tube pan.
- Make a ring of 1/2 apple mix (liquid removed of excess moisture) on top, not having apple mix touch sides of pan. Spoon another 1/3 of batter over, making a ring of remaining apples and top with remaining batter. Bake 1 hour. Can also be made with sliced fresh peaches.
