Late Summer Squash
Ingredients
- 2 Tbsp. Extra virgin olive oil
- 1 x Yellow onion
- 2 x Ripe tomatoes
- 4 x Yellow squash
- 1/2 tsp Dry basil
- 1/2 tsp Dry thyme
- 1/2 tsp Dry oregano Salt & black pepper
- 1/4 c. Pecorino cheese
Directions
- Saute/fry onion in warm oil in saute/fry pan till softened. Add in tomato. Cover. Cook 2 min. Add in squash to pan. Sprinkle on basil, thyme & oregano. Cook about 4 min till squash is soft. Season to taste with salt & pepper.
- Serve with grated cheese.
- Approximately 6-8 min.
