Last Night's Lasagna

- Lasagna pasta - 12 pieces
- 2lbs ground beef (or 1 lb ground beef/1 lb ground pork)
- 1 jar spaghetti sauce
- Salt
- Pepper
- 1/8 cup Italian seasoning (or use fresh basil/thyme/rosemary/oregano mix)
- 3 cups cottage cheese
- 2 cups shredded mozzarella cheese
- 1/2 cup Parmesan cheese
Directions
- Preheat oven to 375 degrees
- Pasta - Fresh pasta is best, but I had left over boxed lasagna noodles. I can only boil about 5 at a time without the noodles breaking. Boil for 10 minutes and then spread on wax paper to cool.
- Meat sauce - Sprinkle salt and pepper on the ground beef and mix by hand. Then brown the ground beef and add half a jar of spaghetti sauce. Let that simmer and thicken.
- Cheese filling - Mix the cottage cheese, 1.5 cups of mozzarella cheese with Italian seasoning. I had some fresh rosemary and thyme so I added that.
- Make 2 layers of the pasta, meat sauce and then cheese filling. I do 4 across and 3 deep. Cover with the last layer of pasta and then pour remaining sauce on top. Sprinkle with remaining mozzarella and 1/2 cup of Parmesan cheese.
- Cover with tin foil and bake for 30 min. Uncover and bake for 10 more minutes.
- Serve with a tossed green salad, tomatoes and avocados. Enjoy!
