Lamb Kebabs With Lemon And Mint From Lhj Online
Ingredients
- 1/4 c. Vegetable oil
- 1 tsp Grated lemon peel
- 1/4 c. Fresh lemon juice
- 2 tsp Chopped garlic
- 2 tsp Dry mint
- 1 1/2 tsp Salt
- 1/4 tsp Freshly grnd pepper
- 2 lb Boneless, trimmed leg of lamb or possibly beef sirloin, cut into 2-inch Pcs
- 4 x Green onions (white part only), cut into eighteen 1-inch pcs
- 18 x Fresh mint leaves
- 1 x Lemon, cut into wedges (optional)
Directions
- 1. Make marinade: Combine oil, lemon peel, lemon juice, garlic, mint, salt and pepper in large bowl. Set aside.
- 2. Add in meat, tossing to coat. Cover and chill 4 hrs or possibly overnight.
- 3. Remove meat from refrigerator 30 min before grilling. Heat grill.
- Thread 6 skewers alternately with meat, mint leaf, green onion, beginning and ending with meat. Grill over medium-warm heat 12 to 15 min for lamb, 12 min for beef, turning frequently and basting every 3 min with remaining marinade. Garnish with lemon wedges.
