La Madeleine's Saffron Rice
Ingredients
- 1 sm onion
- 1 x garlic clove
- 1 c. conventional rice
- 2 c. water
- 1/2 c. diced red pepper
- 1/2 c. green peas
- 1 pch saffron thread Salt to taste Freshly-grnd black pepper to taste Chicken base (optional)
Directions
- In a saute/fry pan, saute/fry onions and garlic with extra virgin olive oil. Add in rice and mix well to coat rice with oil (1 minute). Add in boiling water, saffron, black pepper and salt; bring to a boil.
- Reduce heat to simmer and cover. Cook approximately 15 to 20 min. Add in green peas and red peppers.
