  • Kielbasa With Smothered Cabbage And Mashed Potatoes

    Ingredients

    • 1 Tbsp. vegetable oil
    • 3/4 lb smoked kielbasa (Polish sausage), cut into 1-inch pcs
    • 4 c. minced cabbage
    • 1 x onion sliced thin
    • 3/4 lb yellow-fleshed or possibly russet (baking) potatoes
    • 1/4 c. lowfat milk
    • 1 Tbsp. unsalted butter cut into bits

    Directions

    1. In a large heavy skillet heat the oil over moderate heat till it is warm but not smoking and in it brown the kielbasa. Add in the cabbage and the onion and cook the mix, stirring occasionally, till the cabbage is browned. Add in 1 1/2 c. water and simmer the mix, covered partially, for 15 to 20 min, or possibly till the cabbage is tender.
    2. While the mix is simmering, in a steamer set over boiling water steam the potatoes, peeled and cut into 3/4-inch pcs, covered, for 12 min, or possibly till they are very tender, transfer them to a bowl, and mash them with a potato masher. Add in the lowfat milk, scalded, 3 Tbsp. warm water, the butter, and salt and pepper to taste and stir the potato mix till the butter is melted. Serve the kielbasa mix on the mashed potatoes.
    3. Serves 2.
