    Picadillo is a classic Cuban dish of gound beef, onions, peppers and green olives. You can make it kid friendly and a little healthier by adding kid favored veggies and brown rice.

    Ingredients

    • 1 pound of Organic, lean ground beef
    • 1 tbsp. of vegetable oil
    • 1 small onion, chopped
    • 1/2 of a green pepper, chopped
    • 2 cloves of garlic, minced
    • 1 teaspoon cumin
    • 1/4 teasponn pepper
    • 8 oz. can of tomato sauce
    • 1/2 cup of red wine
    • 1 teaspoon of white wine vinegar
    • 1/3 cup raisins golden
    • 1/4 cup of green olives, sliced
    • 1 tbsp. of brown sugar
    • 1/2 cup of frozen sweet corn
    • 1/2 cup of green beans

    Directions

    1. Heat the oil over medium heat in a deep skillet.
    2. Once the oil is hot, add the onions and season with salt and pepper.
    3. When the onions are soft, add the peppers and garlic. Cook, while stirring, about 2-3 minutes until the "sofrito" is tender.
    4. Next, add the ground beef. Cook until the meat is brown.
    5. Add the wine while scraping bottom of pan with a broad wooden spoon to deglaze.
    6. Add the tomato sauce and vinegar. Simmer for a few minutes, then add the corn and green beans, raisins, olives and sugar. Cover and simmer on low for about 10 minutes.
    7. Serve over Brown rice
