  • Kentucky Yeast Rolls

    Ingredients

    • 1 c. Lowfat milk
    • 5 Tbsp. Sugar
    • 1 tsp Salt
    • 4 Tbsp. (1/4 c) shortening
    • 5 c. Flour (approx)
    • 1 pkt Yeast, dissolved in 1/4 c hot (105-110 deg F) water
    • 1 x Egg, slightly beaten

    Directions

    1. Hot lowfat milk, sugar, salt, and shortening in microwave for 1-2 minutes. Let cold. Shortening need not be melted.
    2. Set aside. Put 2 c. flour in bowl. Add in yeast, egg and liquid ingredients. Using electric mixer, beat well. Add in flour, 1/2 c at a time till mixer can no longer turn. Then stir with wooden spoon. Let dough rest 15 mins on floured board. Knead 15-20 times. Coat dough by rolling in butter-greased bowl. Cover and chill till ready to use. On floured board, knead 10 times. Make balls. Place in greased pan. Let rise 1-2 hours or possibly till dough doubles. Bake at 400 for 10-15 mins or possibly till golden. Remove from oven, butter top of rolls. Serve warm.
