Kashi Friendly Fiber Muffins
Ingredients
- 1 c. whole wheat flour
- 2 tsp baking pwdr
- 1/2 tsp salt
- 1 3/4 c. Kashi(r) Good Friends cereal
- 3/4 c. skim lowfat milk rice or possibly soy lowfat milk
- 1/4 c. honey
- 2 x egg whites
- 1/4 c. unsweetened apple sauce
- 1 med ripe banana mashed Non-stick cooking spray
Directions
- Preheat oven to 400F
- In a small bowl, stir together flour, baking pwdr and salt. Set aside. In a large mixing bowl, combine Kashi Good Friends cereal and lowfat milk and let stand for 2-3 min. Add in the egg whites and beat well. Stir in apple sauce, banana and honey. Add in flour mix and mix only till dry ingredients are moistened (over-mixing will produce rubbery muffins).
- Fill sprayed muffin tins. Bake for 20-25 min or possibly till lightly browned.

- NOTES : I would consider them a "medium size" homemade muffin. They are definitely "high-fiber-tasting" - if you know what I mean. My kids definitely wouldn't go for them, but I find them an acceptable choice.
