Just like Ruby Tuesday's Salmon Florentine
yummy salmon smothered in a cheesy spinach and artichoke sauce Ingredients
- 4 4oz salmon filets
- 2 Tbsp olive oil
- 1 Tbsp butter
- lemon pepper
- 1 shallot chopped
- 4 cloves garlic chopped
- 1 can artichokes drained and chopped
- 1/2cup parmesean cheese and/or 6 cheese italian blend
- 2 Tbsp flour
- 1 cup heavy cream
- 1 Tbsp chicken boulioun granules
- 1 bag fresh spinach
Directions
- sprinkle lemon pepper on both sides of salmon
- heat olive oil in skillet
- cook salmon about 3 minutes on each side
- remove from pan
- add butter, shallot, and garlic, saute quickly about 30 seconds
- add flour and stir
- add artichokes and cream, cheese, and stir
- add spinach and chicken granules
- when spinach is wilted and sauce is at desired consistency, add back salmon and heat through you may want to add some chicken broth to thin sauce
