  • Julia's Birthday Cake

    Ingredients

    • 1 pkt chocolate cake mix - (18.25 ounce) prepared as directed
    • 2 c. heavy cream
    • 1/2 c. sugar
    • 1/2 tsp vanilla extract
    • 1 pt fresh strawberries washed
    • 1/2 c. semisweet chocolate chips - (3 ounce) coarsely minced

    Directions

    1. Bake the cake batter according to the package directions for two 9-inch round layers, let cold then remove from the pans.
    2. In a large bowl, beat the heavy cream and sugar till stiff peaks form. Add in the vanilla, mix well. Reserve six strawberries for garnish, hull and slice the remaining strawberries.
    3. In a medium bowl, combine 2 c. whipped cream and the sliced strawberries, mix well.
    4. Invert one cake layer onto a serving plate. Spread the strawberry mix over it. Place the second cake layer over the first, then frost the top and sides of the cake with the remaining whipped cream. Sprinkle the minced chocolate proportionately over the top and garnish with the reserved strawberries.
    5. Refrigeratefor 2 hrs then serve or possibly cover loosely and keep chilled till ready to serve.
    6. This recipe yields 12 servings.
