  • Joe Muer's Bean Salad(Crockpot)

    Ingredients

    • 2 c. Great Northern Beans dry Salt And Pepper to taste Vinegar to taste
    • 1/2 c. Parsley chopped
    • 1/2 c. Onions chopped

    Directions

    1. IMPORTANT RULES:1. Beans MUST be started in Cool water without presoaking.
    2. 2. Cook beans slowly, adding water as necessary.
    3. 3. Retain the water in that the beans were cooked-Don't DRAIN. Wash and pick over beans and place in crockpot. Add in cool water just to cover.
    4. Check frequently and add in water as necessary to keep just covered. Cook on low heat. Test beans occasionally for doneness by pinching a bean.
    5. When just soft, they are done.
    6. When cold(important), add in dry ingredients with vinegar mixed in last. Add in small amounts of vinegar at a time, tasting as you go.
    7. For future use, the cooked beans can be reserved in their own juice in the refrigerator without the seasoning and vinegar.
