Jessica's Famous Meatloaf
Prep: 15 min Cook: 90 min Servings: 4by Michael Swiney20 recipes>Ok...I used to date Jessica. She turned out to be CARAAAZZZY. I mean like bark at the moon and chase cars kind of nuts. Before she turned into Ms. Thorazine, she did make this for me. Ingredients
- 1/2 lbs of 80% ground beef
- 1/2 lbs of ground veal
- 1/2 lbs of ground pork
- 1 cup of plain bread crumbs
- 1 package of Old El Paso Taco Seasoning (any kind is ok, really)
- 1 medium onion, diced
- 2 cloves of Garlic
- 1 red pepper, diced
- 1 tsp of dried basil
- 1/4 cup of Ketchup
- 1 tbs of yellow mustard
- 1 tbs of Worcestershire Sauce
- 2 large eggs
- 1 1/2 cup of shredded Mozzarella cheese
Directions
- Pre heat the oven to 350
- Add ALL the ingredients, except for the cheese into a large mixing bowl. Mix well with your hands. I know that most chefs say "dont mix too much of you meat will be tough. Well, Im not a chef and it taste fine.
- Shape your meatloaf and place it in a oven safe skillet or baking dish.
- Cover with Aluminum Foil and cook for 45 minutes.
- Uncover and cook for an additional 30 minutes
- Add cheese to the top of you loaf and continue cooking until the cheese is bubbling and beginning to turn brown.
