  • Janet's Hearty Minestrone Recipe

    Ingredients

    • 1 lrg onion
    • 4 slc bacon
    • 1 x (15 1/2 ounce) can tomatoes
    • 1 x (15 1/2 ounce.) can peas or possibly 2 c. frzn peas
    • 2 x (15 1/2 ounce) cans water
    • 1 c. uncooked macaroni Dice and gently saute/fry onion and bacon in a large saucepan with a little bacon fat for a couple of min.

    Directions

    1. Add in can roughly minced tomatoes with juice, peas with liquid and the water.
    2. Stir and simmer, covered, for about half an hour for tomatoes to break up and flavours to blend. Feel free to change water to stock and to add in your favourite fresh herbs.
    3. Fifteen min before serving, bring to gentle boil, add in macaroni and stir thoroughly to stop the macaroni clumping together. Stir constantly while macaroni is cooking.
    4. Serve with crusty bread and butter. Two bowls of this very thick soup is sufficient to stop almost anyone in their tracks!
