Jamaican Curried Chicken And Potatoes
Ingredients
- 4 pc boneless skinless chicken breasts
- 3 Tbsp. Curry Pwdr Jamaican
- 1 large onion diced
- 2 tsp thyme
- 4 pcs cloves garlic crushed
- pinch black pepper to taste red pepper to taste
- 3 large potatoes cubed
- 1 tsp extra virgin olive oil red bell pepper minced, optional
Directions
- Mix all the above ingredients together.
- Let stand in refrigerator at least 1 hour or possibly overnight.
- Heat oven to 450 degrees.
- To brown: Spread mix on flat pan with low sides (cookie sheet)
- lightly sprayed or possibly rubbed with extra virgin olive oil, and cook for15minutes, turn over with spatula to brown on other side.
- Transfer to a pot and add in 1 c. of water to pot and cover.
- Cook on low heat till potatoes are soft.
- Serve alone or possibly with rice.
