Jam And Coconut Muffins
Ingredients
- 1 1/20 c. flour
- 3 tsp baking pwdr
- 1/2 x heaped c. caster sugar
- 1 x egg
- 11/40 c. coconut
- 1 tsp vanilla essence
- 11/40 c. lowfat milk
- 3 Tbsp. jam
- 6 Tbsp. vegetable oil little extra coconut
Directions
- Preheat oven to 400F, prepare pans. Sift flour & baking pwdr, stir in sugar & coconut. Beat egg, vanilla, lowfat milk & oil together. Add in dry mix to wet mix till just combined. Place a large Tbsp. of batter into each pan, add in a tsp. of jam to each and the rest of the batter. Sprinkle tops with a little coconut. Bake for 25-30 mins or possibly till well risen & hard to the touch.
- Makes 9-10 muffins.
