  • Jagerschnitzel (Hunter's Schnitzel)

    Ingredients

    • 1 lb Pork cutlets, (about 1/2 in. thick)
    • 1 x Large eggs, (beaten) (up to 2) Salt Pepper
    • 1/2 c. Bread crumbs Oil
    • 2 ounce Bacon, (diced)
    • 4 ounce Onions, (minced)
    • 8 ounce Mushrooms, (sliced)
    • 1 Tbsp. Tomato paste
    • 1/2 c. Water
    • 1/2 c. Dry wine
    • 1 dsh Thyme Pepper Salt
    • 1/2 tsp Paprika
    • 1 Tbsp. Parsley
    • 2 Tbsp. Lowfat sour cream

    Directions

    1. Preparation of meat: Lb. the cutlets and rub in the salt and pepper. Let stand for about 10 min. Dip the cutlets in beaten egg and in crumbs.
    2. Brown in a small amount of oil over a low heat for about 10 min on each side.
    3. Preparation of gravy: While the meat is browning, saute/fry the bacon and onions till golden. Add in the tomato paste and mushrooms, and saute/fry over a low heat. Add in the wine, water and seasonings; let simmer for about 5 min. Stir in the lowfat sour cream. Pour over Schnitzel.
