Jacques Pepin's Ravigote Sauce
Including this here so I can always find it -- wonderful on poached salmon. Ingredients
- 3/4 C plum tomatoes, seeded and diced
- 1 T capers, drained
- 1/3 C scallions, chopped
- 1/3 C onion, rinsed, drained and chopped
- 2 garlic cloves
- 1/3 C parsley, coarsely chopped
- 1/2 t salt
- 1/4 t freshly ground pepper
- 1/4 C extra-virgin olive oil
- 1 t lemon zest
- 1 T fresh lemon juice
Directions
- Combine all ingredients in a bowl.
