Italian Style Fresh Tomato Salad
A make-ahead marinated salad delight or side - so simple, so delicious! The ingredient proportions are suggested below but not exact so base them on your personal tastes (see photos.) It might take a batch or two to get the balance and amount of oil to vinegar just to your taste. Ingredients
- 3 or 4 large tomatoes, sliced 1/4" to 3/8" thick
- 1 tablespoon red wine vinegar, or more to taste
- 2 tablespoons olive oil, or more to taste
- 1/3 cup chopped onions or sliced scallions
- Garlic powder to taste
- 1/2 teaspoon Italian seasoning, or more to taste
- Freshly ground pepper to taste
Directions
- In bottom of a square or rectangular glass baking dish (such as Pyrex or Corningware) drizzle a small amount vinegar and olive oil and swirl pan bottom to coat.
- Arrange 1 layer of tomato slices close together and flat on top. Drizzle about a teaspoon of the measured vinegar and 2 teaspoons of the measured olive oil on top of the tomato layer (remember this is to your taste, so drizzle accordingly!)
- Sprinkle this tomato layer with a proportional amount of onions, then garlic powder, Italian seasoning and freshly ground pepper.
- Repeat layers in this manner (depending on baking dish size and amount of sliced tomatoes, you should have at least 2 and perhaps 3 layers of tomato slices, and ending with the drizzle of olive oil, vinegar and seasonings). Cover serving dish with plastic wrap and refrigerate for 1 to 2 hours to marinate before serving.
- (4 large tomatoes should make enough for 6 side servings, about 3 slices each.)
