  • Italian Sausage Sandwiches

    Ingredients

    • 1 1/2 Tbsp. Extra virgin olive oil
    • 1 lb Sweet or possibly warm Italian sausages
    • 2 med Onions, sliced into 1/3-inch rings
    • 2 Tbsp. Crushed garlic
    • 1/2 tsp Dry oregano
    • 1/4 tsp Freshly grnd black pepper
    • 4 x Warm frying peppers or possibly warm chilies, (optional)
    • 1 jar , (8-oz) roasted red bell peppers, liquid removed, seeded, and cut into 1/2-inch strips
    • 2 tsp Capers, liquid removed, (optional)
    • 1 lrg Loaf Italian bread
    • 8 x Bottled pepperoncini peppers, liquid removed, (optional) Anchovy strips, (optional)

    Directions

    1. Brush skillet with some of the oil and cook sausages over medium heat till brown, turning and pricking skins occasionally. Drain on paper towels, slice lengthwise, and keep hot.
    2. In another skillet over medium heat, hot remaining oil. Saute/fry onion, garlic, oregano, and black pepper, stirring occasionally, till onion is tender (about 8 min). Add in frying peppers, if used, and saute/fry till tender (about 10 min). Add in roasted red bell peppers and cook another 5 min, stirring occasionally. Stir in capers, if used.
    3. Cut bread across into 4 sandwich-sized slices. Cut each slice lengthwise into 2 long halves. Spoon vegetables onto 4 slices of bread. Add in pepperoncini, if used. Top with halved sausage, anchovy strips, if used, and 4 remaining slices of bread. Serve immediately.
    4. Servings: 4.
