  • Italian Breast Of Chicken

    Ingredients

    • 4 x Boneless, skinless chicken breasts
    • 1/2 c. Low-calorie Italian dressing
    • 2 tsp Parmesan cheese
    • 1/4 c. Italian bread crumbs
    • 2 tsp Minced fresh basil
    • 2 x Roma tomatoes
    • 2 Tbsp. Extra virgin olive oil
    • 1/2 lb Angel hair pasta - cooked
    • 1 c. Peas

    Directions

    1. Directions: In a shallow baking dish, combine the chicken and Italian dressing. Allow to marinate for two hrs. Place the chicken with the dressing into a 400 degree oven and bake 10-12 min. Remove from oven.
    2. In a small bowl, combine the parmesan cheese, bread crumbs and basil. Slice the tomatoes and place two slices on top of each cooked chicken breast.
    3. Sprinkle with the crumb mix. Return the chicken to the oven and continue to bake till the topping is golden brown. In a saute/fry pan, heat the extra virgin olive oil. Add in the cooked pasta and peas. Saute/fry briefly. Place a serving of pasta on a plate and put a chicken breast on top.
