Italian Bread Filled With Mushrooms
Ingredients
- 1 x 1 lb. round loaf Italian bread
- 2 Tbsp. butter
- 2 Tbsp. extra virgin olive oil
- 2 sm onions minced
- 2 x green onions minced
- 1 1/2 lb mushrooms sliced
- 4 ounce Gorgonzola cheese crumbled
Directions
- Preheat oven to 350F. Using serrated knife, cut top off bread and reserve. Cut out inside of bread, leaving 3/4-inch shell. Place bread and top on cookie sheet. Bake till lightly toasted, about 10 min.
- Keep bread hot.
- Meanwhile, heat butter with oil in heavy medium skillet over medium heat.
- Add in both onions and saute/fry till golden, about 10 min. Add in mushrooms and cook till tender, about 10 min.
- Reduce heat to low. Add in cheese and stir till thoroughly blended, about 4
- min (don't boil). Pour Mix into loaf. Replace top and serve, cutting base and top into wedges.
- Serves 4 to 6.
