    Comfort food at it’s best made quick and easy in the pressure cooker. Packed with meat, veggies and flavoured with beer, this Irish Stew with Guinness(Pressure Cooker)is perfect for St. Patrick’s Day or a great weeknight dinner.

    Ingredients

    • 2 pounds inside round steak (cut into cubes)
    • 2 1/2 cups of heirloom carrots (cut into 1 inch pieces)
    • 3 cups of purple potatoes (peeled and cut into cubes)
    • 2 cups of rutabaga (peeled and cut into cubes)
    • 1 cup of mushrooms (quartered)
    • 1 medium onion (diced)
    • 1 tbsp. Worcestershire sauce
    • 1 cup of beef broth
    • 2 cups of Guinness beer
    • 1/2 tsp. salt
    • 1/2 tsp. pepper
    • 1/2 tsp. seasoned pepper blend
    • 2 tbsp. olive oil
    • 2-3 sprigs of fresh thyme (tied with string)
    • 1 tbsp. fresh thyme for garnish
    • 2 tbsp. cornstarch
    • 2 tbsp. water

    Directions

    1. Heat pressure cooker with olive oil
    2. Sauté onions until translucent
    3. Add salt, pepper and pepper blend
    4. Add beef and brown for 10 minutes
    5. Add Worcestershire sauce
    6. Add veggies and give everything a mix
    7. Drop in thyme bundle
    8. Add beer
    9. Add broth
    10. Secure lid and bring up to high pressure
    11. When pressure is reached, reduce heat to keep even pressure and cook for 25 minutes
    12. Remove from heat and release pressure
    13. When pressure is finished releasing, remove lid
    14. Return pot to heat and bring to a boil
    15. Mix cornstarch and water together
    16. Thicken broth with the cornstarch mixture, stirring until your desired thickness is achieved
    17. Ladle into bowls and garnish
    18. ENJOY!!
