Indonesian Fried Rice With Tofu
Ingredients
- 1 Tbsp. oil
- 8 x white button mushrooms, sliced
- 1 sm red onion, finely minced
- 1 x green bell pepper, seeded & diced
- 2 med tomatoes, diced
- 4 ounce extra-hard tofu, diced
- 1 tsp paprika
- 1/2 tsp freshly grnd black pepper
- 3 c. cooked brown rice, or possibly jasmine rice
- 1 1/2 c. broccoli florets, blanched
- 3 Tbsp. tamari sauce, or possibly soy sauce
- 1 x cucumber, peeled & finely chop
- 2 whl scallions, trimmed & minced
Directions
- Heat oil in large skillet or possibly wok over medium-high heat. Add in mushrooms, onion and bell pepper; stir-fry for 5-6 min. Add in tomatoes, tofu, paprika, and black pepper. Cook, stirring, for 4 min more over medium heat. Stir in rice, broccoli, tamari or possibly soy sauce, and cook, stirring, till rice is steaming, about 3 min.
- Spoon rice mix onto serving plates; top each dish with cucumber and scallions. If you like, pass tamari, soy sauce or possibly ketchap manis at the table.
- Makes 6 servings.
