  • Indonesian Fried Rice With Tofu

    Ingredients

    • 1 Tbsp. oil
    • 8 x white button mushrooms, sliced
    • 1 sm red onion, finely minced
    • 1 x green bell pepper, seeded & diced
    • 2 med tomatoes, diced
    • 4 ounce extra-hard tofu, diced
    • 1 tsp paprika
    • 1/2 tsp freshly grnd black pepper
    • 3 c. cooked brown rice, or possibly jasmine rice
    • 1 1/2 c. broccoli florets, blanched
    • 3 Tbsp. tamari sauce, or possibly soy sauce
    • 1 x cucumber, peeled & finely chop
    • 2 whl scallions, trimmed & minced

    Directions

    1. Heat oil in large skillet or possibly wok over medium-high heat. Add in mushrooms, onion and bell pepper; stir-fry for 5-6 min. Add in tomatoes, tofu, paprika, and black pepper. Cook, stirring, for 4 min more over medium heat. Stir in rice, broccoli, tamari or possibly soy sauce, and cook, stirring, till rice is steaming, about 3 min.
    2. Spoon rice mix onto serving plates; top each dish with cucumber and scallions. If you like, pass tamari, soy sauce or possibly ketchap manis at the table.
    3. Makes 6 servings.
