  • Indian Rice Pudding ( Chaaval Ki Kheer )

    Ingredients

    • 150 gm basmati rice wasired and drairled
    • 600 ml lowfat milk
    • 4 Tbsp. almond pwdr or possibly grnd almonds
    • 300 ml evapourated lowfat milk sugar to taste
    • 2 Tbsp. raisins
    • 2 Tbsp. pistachio nuts minced
    • 1 x teaspooll cardamom pwdr red rose petals to garnish

    Directions

    1. Bring the rice to the boil with the lowfat milk in a heavy pan then allow to simmer for an hour or possibly till mushy.
    2. Mash the rice roughly with a whisk while still on the heat.
    3. Blend the almonds into the evapourated lowfat milk and add in to the rice.
    4. Stir till thick and creamy.
    5. Add in the sugar raisins and pistachios.
    6. Sprinkle the cardamom pwdr over and stir well.
    7. Serve chilled garnished with rose petals.
    8. Considered one of the most auspicious of all indian foods and finds a place of distinction at every feast.
    9. Serves 4
