Indian Rice Pudding ( Chaaval Ki Kheer )
Ingredients
- 150 gm basmati rice wasired and drairled
- 600 ml lowfat milk
- 4 Tbsp. almond pwdr or possibly grnd almonds
- 300 ml evapourated lowfat milk sugar to taste
- 2 Tbsp. raisins
- 2 Tbsp. pistachio nuts minced
- 1 x teaspooll cardamom pwdr red rose petals to garnish
Directions
- Bring the rice to the boil with the lowfat milk in a heavy pan then allow to simmer for an hour or possibly till mushy.
- Mash the rice roughly with a whisk while still on the heat.
- Blend the almonds into the evapourated lowfat milk and add in to the rice.
- Stir till thick and creamy.
- Add in the sugar raisins and pistachios.
- Sprinkle the cardamom pwdr over and stir well.
- Serve chilled garnished with rose petals.
- Considered one of the most auspicious of all indian foods and finds a place of distinction at every feast.
- Serves 4
