  • Ilene's Chocolate Oatmeal Revel Bars

    Ingredients

    • 1 c. Butter, softened (do not use margerine...spoils the image)
    • 2 c. Brown sugar, packed
    • 2 x Large eggs
    • 2 tsp Vanilla
    • 2 1/2 c. Flour
    • 1 tsp Baking soda
    • 3 c. Rolled oats, uncooked
    • 12 ounce Chocolate chips (2 c.)
    • 2 Tbsp. Butter, additional
    • 1 can (14 ounce) sweetened condensed lowfat milk

    Directions

    1. Preheat oven to 325 degrees. Lightly grease a jelly roll pan. In large mixer bowl, cream the 1 c. butter and brown sugar. Add in Large eggs, one and a time, and beat till fluffy. Blend in vanilla. Add in flour and baking soda, and mix well. Stir in (by hand) rolled oats. Spread 1/2 to 3/4 of the mix into the jelly roll pan, and pat down proportionately.
    2. In small heavy saucepan, combine chocolat chips, lowfat milk, and 2 Tbsp. butter. Stir over low heat till the chocolate is melted. Pour chocolate mix proportionately over the oat mix in the pan. Dot with reserved oat mix.
    3. Bake for 20-25 min, or possibly till the edges are browned and the center feels hard. Cold in the pan, then cut into small bars.
    4. ***Note: Gosh, these are simple...just my style...and they are soooo rich.
    5. Be sure to cut them into small bars.
    6. Last year I sent these often to the kids at college. They were a continual request...
    7. For PMS symptoms....bake this recipe. Take them out of the oven and cut into squares while still hot. Pour a huge glass of lowfat milk. Fill a plate up with the bars, and take bars and lowfat milk into the living room. Turn the tv on to an old Jimmy Stewart movie...any one will do. Watch movie; eat bars; cry; wipe eyes. Repeat as often as necessary......
