I-Tal Omelette
Ingredients
- 4 green bananas
- 1 medium onion
- !/2 pt water
- 1 tbs wholewheat flour
- 1/2 tsp nutmeg
- 2-3 tbs coconut or peanut oil
Directions
- 1. Slice the ends off the bananas and cut them in half crossways.
- 2. Use a knife to slit through the skin to the flesh along the length of each banana half.
- 3. Take off the skin using your fingers.
- 4. Place the bananas in an electric blender and blend until smooth adding the water a little at a time.
- 5. In a bowl, mix the bananas with the peeled and finely chopped onion.
- 6. Stir in the wholewheat flour and nutmeg.
- 7. Heat the oil in a frying pan, pour in the banana mixture and fry on both sides until golden brown.
- Divide into porrtions and serve.
