  • Hungarian Goulash

    Ingredients

    • 20 lbs beef cubes from the rounds
    • 3 lbs onions, chopped
    • 1/4 cup minced garlic
    • 1 lb margarine
    • 1 cup brown sugar
    • 2 Tbsp dry mustard
    • 1/2 cup paprika
    • 1 tsp cayenne
    • 1/4 cup salt
    • 3 cup Worcestershire sauce
    • 1/4 cup cider vinegar
    • 2 qts catsup
    • 6 qts water
    • 2 lbs flour
    • 2 qts water

    Directions

    1. Note: use tilt kettle for this recipe.
    2. Melt/heat margarine and brown beef and onions. Add garlic.
    3. Mic all seasonings, sugar, and liquids together and stir into browned meat and vegetables.
    4. Close lid and simmer for 1- 1.5 hours until meat is tender.
    5. Mix together flour and water until smooth and gradually add to the beef mixture, cooking until thickened.
    6. Pan up and serve.
