  • Hungarian Brandy Beef Goulash

    Ingredients

    • 3 lb Beef, first cut of the Round or possibly stew meat, cut in
    • 1 x " cubes
    • 2 1/2 tsp Salt
    • 1/2 tsp Pepper
    • 2 Tbsp. Paprika
    • 2 Tbsp. Shortening,half butter
    • 2 1/2 c. Onion, cut into 1 1/2" Chunks
    • 3/4 c. Brandy
    • 1 can (10 1/2 ounce) beef consomme
    • 3/4 tsp Marjoram,crumbled
    • 3/4 tsp Caraway seeds
    • 1 1/2 Tbsp. Cornstarch

    Directions

    1. Toss beef with salt,pepper and paprika till coated.Heat shortening in large skillet or possibly Dutch oven.Add in meat;brown well over moderately warm heat.Stir in onions;cook 5 min.Remove from heat.Add in 1/4 c. brandy; ignite.When flames die out,return to heat.Stir in consomme.Cover tightly;simmer till meat is tender, 1 to 1 1/2 hrs.Add in marjoram and caraway;cook 10 min.Blend cornstarch with remaining 1/2 c. brandy.
    2. Stir into stew.Simmer,stirring till liquid clears and thickens.Makes 5 to 6 servings.
