Hudson's Nutmeg Scalloped Potatoes
"Cooking Fearlessly" Hudson's on the Bend Restaurant Ingredients
- 6 large potatoes
- 1 lb bacon
- 2 onions, julienned
- 1 qt cream
- 1 1/2 tsp black pepper
- 1 1/2 tsp white pepper
- 1 tb nutmeg
- 4 tb cornstarch mixed with 3-4 tb water
- salt
- 1 tb butter
- 1/2 c parmesan cheese, grated
Directions
- Slice potatoes in buttered baking dish
- Brown bacon, drain, reserve drippings
- Saute onions in 2 tb drippings
- Combine onions and bacon together
- Combine cream, peppers, and nutmeg in saucepan
- Bring to boil and add cornstarch slurry
- Sprinkle bacon/onion mixture over potatoes
- Top with sauce, sprinkle with parmesan cheese
- Bake at 400* 30-45 minutes
