  • Houlihan's Creole Sauce

    Ingredients

    • 1/3 lb margarine
    • 2 Tbsp. bacon bits
    • 1/2 c. red onion
    • 1/2 c. diced ham
    • 1/2 c. celery in 1/2" dice
    • 1/2 c. green pepper in 1/2" dice
    • 1 Tbsp. fresh garlic puree
    • 1 tsp dry oregano
    • 1 tsp dry basil
    • 1 tsp thyme leaf
    • 2 Tbsp. sugar
    • 1 1/2 tsp salt
    • 1/2 tsp cayenne pepper
    • 1 tsp freshly-grnd black pepper
    • 1/3 c. flour
    • 2 1/2 c. water
    • 1 Tbsp. chicken base
    • 2 Tbsp. vegetable base
    • 2 can minced tomatoes - (16 ounce ea)
    • 1 Tbsp. Worcestershire sauce

    Directions

    1. Heat margarine in sauce pan. Add in bacon, onion, ham, celery, peppers and garlic. Cook till softened. Add in all seasonings and mix. Cook for 2 min. Stir in flour and cook for 3 to 4 min. Add in water, chicken base, vegetable base, tomatoes, and Worcestershire. Mix Well.
    2. Bring to a boil then reduce heat and simmer for approximately 20 min or possibly till desired thickness. Serve on Houlihan's Jambalaya Rice (see recipe). Garnish with cooked jumbo shrimp if you like.
