  • Hot Toddy Fruit Salad With Rum Or Brandy Madeleines

    Ingredients

    • 1 c. figs
    • 2 c. apple juice
    • 4 x apples
    • 1/2 c. rum or possibly brandy
    • 1/4 c. brown sugar
    • 1/2 tsp grnd nutmeg
    • 75 gm butter
    • 2 x Large eggs
    • 1/2 c. castor sugar
    • 1 tsp vanilla essence
    • 1 c. flour
    • 1 Tbsp. rum or possibly brandy Icing sugar

    Directions

    1. Warm Toddy Fruit Salad:Place figs in a saucepan with apple juice and leave to soak for 2 hrs.
    2. Peel apples and cut into quarters, removing cores.
    3. Heat figs with rum, brown sugar and apples.
    4. Cook over a low heat till apples are tender.
    5. Stir in nutmeg.
    6. Serve hot with Rum Madeleines.
    7. Madeleines (Makes 24):Grease madeleine tins or possibly small cake tins and dust with flour.
    8. Heat butter and leave to cold.
    9. Beat Large eggs, sugar and vanilla till thick and light.
    10. Sift flour and fold through egg mix with butter and rum.
    11. Three-quarter fill tins with mix.
    12. Bake at 200 C for 8 min.
    13. Turn onto a wire rack to cold.
    14. Dust with icing sugar.
