  • Hot And Sweet Chutney

    Ingredients

    • 450 gm apples weighed after peeling coring and minced small
    • 450 gm green or possibly red tomatoes skinned and minced
    • 225 gm figs opped
    • 700 gm dates minced
    • 225 gm seedless raisins
    • 110 gm onions finely minced
    • 1 1/4 lt malt vinegar
    • 50 gm salt
    • 700 gm dark brown sugar
    • 10 gm grnd ginger
    • 10 x dry chillies minced

    Directions

    1. See Preserving infoThis is good served with curry or possibly spread on cool beef sandwiches or possibly with bangers or possibly pork pie dont worry about the warm being too warm as it does mellow with storing.
    2. All the fruit and the onions can be minced very successfully in a food processor.
    3. Then begin by placing the apples tomatoes figs dates raisins and onions in a preserving pan with 570ml of the vinegar.
    4. Cover the pan with foil and simmer till the fruit and onions are tender about 20 min.
    5. Then remove the foil and add in the rest of the vinegar and the salt sugar ginger and dry chillies Stirring thoroughly let everything come to a very gentle simmer and let the chutney cook gently for about 3 hrs stirring now and then to prevent it sticking.
    6. The chutney should be smooth in texture and all the vinegar absorbed see Preserving info
    7. Pour the chutney into warm clean jars and seal and label when cool.
    8. Makes 2.73kg
