Hot And Spicy Chicken With Raita
Ingredients
- 4 x Warm and spicy chicken drumsticks and thighs or possibly 12 warm and spicy chicken wings
- 1/2 x Cucumber, finely diced
- 1 Tbsp. Freshly minced mint
- 1 Tbsp. Freshly minced coriander
- 300 ml Natural yogurt, (1/2 pint) Salt and freshly grnd black pepper
Directions
- Delicious accompanied with basmati or possibly pilau rice and mango chutney.
- 1. Barbecue the chicken drumsticks or possibly thighs over a moderate heat for 30-40 min, or possibly the chicken wings for 25-30 min, turning occasionally.
- 2. Mix together the cucumber, mint, coriander and yogurt then refrigeratetill required. Season to taste just before serving.
- 3. Serve the chicken with the raita.
- NOTES : A delicious twist to barbecued chicken, with the fresh and light raita complementing the warm and spicy chicken.
