  • Hot And Spicy Chicken With Raita

    Ingredients

    • 4 x Warm and spicy chicken drumsticks and thighs or possibly 12 warm and spicy chicken wings
    • 1/2 x Cucumber, finely diced
    • 1 Tbsp. Freshly minced mint
    • 1 Tbsp. Freshly minced coriander
    • 300 ml Natural yogurt, (1/2 pint) Salt and freshly grnd black pepper

    Directions

    1. Delicious accompanied with basmati or possibly pilau rice and mango chutney.
    2. 1. Barbecue the chicken drumsticks or possibly thighs over a moderate heat for 30-40 min, or possibly the chicken wings for 25-30 min, turning occasionally.
    3. 2. Mix together the cucumber, mint, coriander and yogurt then refrigeratetill required. Season to taste just before serving.
    4. 3. Serve the chicken with the raita.
    5. NOTES : A delicious twist to barbecued chicken, with the fresh and light raita complementing the warm and spicy chicken.
