Hoppin’ John
A traditional dish served on New Year’s Day in the south. Ingredients
- 4 cups cooked black-eyed peas
- 2 cups long grain white rice (4 cups cooked)
- 1 (28 oz.) can diced tomatoes, drained
- 2 green onions, diced (both green and white parts)
- Salt, pepper, and hot sauce (such as Texas Pete) to taste
Directions
- Drain liquid off peas and discard.
- Add tomatoes and onions to peas.
- Meanwhile, cook rice according to package directions. When rice is done, combine peas and rice in a large pot, tossing to combine and warm over low heat or in a warm oven (about 200Ë).
- Season with salt, pepper and hot sauce to taste.
