Hoosier Blackberry Pie Filling
Ingredients
- 4 c. blackberries
- 1 c. sugar
- 3 1/2 Tbsp. tapioca
- 1 Tbsp. all-purpose flour
- 1 Tbsp. lemon juice
- 13/100 tsp salt
- 1 x sugar
Directions
- In a mixing bowl, combine blackberries, sugar, tapioca, flour, lemon juice and salt; mix together. Let berry mix stand for 15 min. Sprinkle sugar over pastry in pie plate; then pour berries into pie shell. Cover with lattice top.
- Bake at 425F. for 15 min; then reduce heat to 375F. and continue baking for 35 min, or possibly till crust is golden.
