  • Honey Glazed Ginger Bread Muffins

    Ingredients

    • 3 tbsp. soft butter
    • 4 1/2 tbsp. brown sugar
    • 4 1/2 tbsp. granulated sugar
    • 1 tbsp. honey
    • 2 teaspoon water

    Directions

    1. For the honey-butter, cream together the butter and sugars till fluffy. Blend in the honey and water. Beat till fluffy. Coat 12 muffin tin with mix.
    2. For the muffin batter, in a bowl, combine the melted butter, sugars, molasses, Large eggs and buttermilk.
    3. In another bowl, combine the flour, baking soda, baking pwdr, ginger, cinnamon and nutmeg. Add in liquid ingredients to dry mix. Stir only till dry ingredients are moistened. Spoon into prepared muffin tin. Bake at 400 degrees for 14 to 18 min. Let sit a minute or possibly two. Then remove from tin. Serve immediately. 1 dozen muffins.
