    Whenever I cook this dish I make sure that I put a little twist each time. Just to compare the differences... why not?! lolz

    Ingredients

    • 1/2 kilo Pork meat, cut into squares or strips
    • 3 tbsp soy sauce
    • 3 tbsp calamansi juice
    • 2 tsp can vinegar
    • salt and pepper to taste
    • 1 med potato, sliced into wedges
    • 1 med carrot, sliced into bite size
    • 2 cloves garlic, minced
    • 1 med onion, diced
    • raw sugar
    • 1 tsp paprika
    • dry basil (optional)
    • cornstarch
    • Canola oil
    • Pork or beef broth

    Directions

    1. Marinade the pork with soy sauce, calamansi juice, cane vinegar, salt and pepper. Set aside for 1-2 hrs.
    2. Fry the potatoes and carrots, set aside.
    3. Fry the pork after marinade, set aside.
    4. Saute the onion and garlic in a deep pot
    5. Add the fried pork and stir fry.
    6. Pour in the broth or water until it covers the pork.
    7. Bring into a boil.
    8. Lower the heat once boiling and let it simmer until pork is tender. Usually i let it simmer for an hour slow cooking.
    9. (you can use the pressure cooker to shorten the cooking time, i prefer slow cooking)
    10. Once the pork is tender, add the basil, paprika, raw sugar.
    11. Adjust to your desired taste.
    12. Let the juices dissolves up to your desired amount.
    13. Add the cornstarch and stir until the sauce is thick enough to your liking.
    14. Turn off heat and arrange the meat and the potatoes and carrots in a serving bowl.
    15. Serve with steamed rice.
