- 1/2 kilo Pork meat, cut into squares or strips
- 3 tbsp soy sauce
- 3 tbsp calamansi juice
- 2 tsp can vinegar
- salt and pepper to taste
- 1 med potato, sliced into wedges
- 1 med carrot, sliced into bite size
- 2 cloves garlic, minced
- 1 med onion, diced
- raw sugar
- 1 tsp paprika
- dry basil (optional)
- cornstarch
- Canola oil
- Pork or beef broth
Directions
- Marinade the pork with soy sauce, calamansi juice, cane vinegar, salt and pepper. Set aside for 1-2 hrs.
- Fry the potatoes and carrots, set aside.
- Fry the pork after marinade, set aside.
- Saute the onion and garlic in a deep pot
- Add the fried pork and stir fry.
- Pour in the broth or water until it covers the pork.
- Bring into a boil.
- Lower the heat once boiling and let it simmer until pork is tender. Usually i let it simmer for an hour slow cooking.
- (you can use the pressure cooker to shorten the cooking time, i prefer slow cooking)
- Once the pork is tender, add the basil, paprika, raw sugar.
- Adjust to your desired taste.
- Let the juices dissolves up to your desired amount.
- Add the cornstarch and stir until the sauce is thick enough to your liking.
- Turn off heat and arrange the meat and the potatoes and carrots in a serving bowl.
- Serve with steamed rice.
