    Homemade Lemon~Vinegar Pickles

    Easy recipe for homemade pickles, great with sandwiches.

    Ingredients

    • 2 cucumbers, sliced
    • 2 lemons (juice only)
    • 1/4 cup white distilled vinegar
    • 1/4 cup cold water
    • 1 tablespoon sugar
    • 1 tablespoon peppercorns
    • 1-1/4 teaspoons sea salt
    • 1/2 white onion sliced thin

    Directions

    1. In a saucepan on medium heat add vinegar, water, peppercorns, sugar, salt and cook 6 minutes (do not boil). Stir well. Add lemon juice, onions once liquid cools down completely, stir well.
    2. Slice cucumbers and divide them into two jars (airtight) add liquid and promptly refrigerate up to 2 weeks.
    3. I usually let them sit and chill a few days then serve with sandwiches.
    4. Enjoy!
