  • Home Style Pork And Cucumber Soup

    Ingredients

    • 1/4 lb Lean pork
    • 1/2 tsp Sugar
    • 1/2 Tbsp. Light soy sauce
    • 1/2 Tbsp. Rice wine or possibly dry sherry
    • 1 tsp Cornstarch
    • 1 tsp Vegetable oil or possibly Asian, sesame oil
    • 1 sm Cucumber
    • 4 c. Chicken stock or possibly water
    • 1 x 1 qt Slic fresh ginger, lightly crushed
    • 1 Tbsp. Chopped Smithfield ham or possibly, prosciutto (optional Coriander sprigs for garnish

    Directions

    1. Nothing fancy about this soupit's just simple, delicious and refreshing.
    2. Cut the pork into thin slices and combine with the sugar, soy sauce, wine, cornstarch and oil. Set aside.
    3. Peel, halve and seed the cucumber. Cut crosswise into 1/4-inch thin slices.
    4. Bring stock and ginger to a boil.
    5. Add in the pork and reduce to a lively simmer; simmer for 10 min. Add in cucumber and simmer till translucent/soft, about 3 min.
    6. Garnish with the optional ham and coriander.
    7. Serves 6 as part of a multiple-dish Chinese meal.
