  • Hearty Potato, Beef And Bean

    Ingredients

    • 1/2 (32 ounce.) pkg. frzn hash brown potato nuggets (3 1/2 c.) - slightly
    • thawed
    • 1 pound lean grnd beef
    • 1/2 teaspoon salt
    • dry parsley flakes
    • 11 ounce. can condensed Nacho cheese soup
    • 1 med. onion (minced)
    • 1/4 teaspoon pepper
    • 15 1/2 ounce. can red kidney beans (liquid removed)

    Directions

    1. About 1 hour before serving, preheat oven to 400 degrees. In 10 inch skillet, over high heat, cook grnd beef, onion, salt, pepper and 1 Tbsp. parsley flakes, stirring occasionally, till all pan juices evaporate and meat is well- browned. Spoon off fat if any. Stir in kidney beans and half of undiluted soup. Spread half of hash brown potato mix in bottom of greased deep 2 qt casserole; top with grnd beef mix, then with remaining potato mix. Sprinkle with 1 tsp. dry parsley flakes. Bake uncovered, 40 to 45 min, till potatoes on top are golden brown and mix is warm. Makes 6 main dish servings.
