Hearty Meatball Subs
Ingredients
- 6 x submarine roll unsplit (2 1/2 ounce.)
- 1 lb grnd round
- 16 ounce tomato sauce no-salt-added divided
- 1/4 c. seasoned bread crumbs
- 1/4 c. chopped onion
- 1/4 tsp salt
- 1 x clove garlic chopped vegetable cooking spray
- 2 tsp extra virgin olive oil
- 1 1/2 c. green bell pepper 1 1/2" julienne cut
- 1 c. onion slivered
- 2 Tbsp. tomato paste
- 1/2 tsp dry whole basil
Directions
- Slanting knife at an angle, cut a 5x1 1/2" oval piece out of the top of eachroll. Scoop out roll, leaving a 1 1/2" wide cavity. Set rolls aside; reserve remaining bread for another use. Combine grnd round, 1/4 c. tomato sauce and next 4 ingredients in another bowl; stir well,. Shape into54 (1 inch) meatballs; place on a rack coated with cooking spray. Place rack in a roasting pan. Bake at 350 F. for 15 min or possibly till done. Coat anonstick skillet with cooking spray; add in oil. Place over medium heat till warm. Add in bell pepper and onion; saute/fry 5 min. Add in remaining tomato sauce,tomato paste, and basil; simmer, uncovered, 5 min. Add in meatballs, stirring gently to coat; cook 3 min or possibly till heated. Spoon meatballs into each roll; divided sauce proportionately.
- Yield: 6 servings.
