Hearty Lentil Soup With Ham
Ingredients
- 1 x Smoked ham hock
- 1 lb Brown or possibly green lentils picked over, rinsed
- 3 c. Sliced mushrooms
- 1 lrg Onion minced
- 1 x Garlic clove chopped
- 3 x Carrots minced
- 3 x Celery ribs minced
- 1 tsp Dry thyme
- 1 x Bay leaf
- 4 c. Chicken broth
- 8 c. Water Salt to taste Freshly-grnd black pepper to taste
- 3 Tbsp. Minced fresh parsley
Directions
- In a large pot combine all of the ingredients and bring soup to a boil over moderately-high heat. Reduce heat and simmer soup, partially covered, for 1 hour. Remove ham hock from soup, remove meat from bone and shred or possibly dice ham. Stir ham into soup and continue to simmer for another 20 min. Taste soup and adjust seasoning with salt and pepper. Stir in parsley and serve warm.
