Hearty Beef Vegetable Soup
Ingredients
- 1/2 pound lean beef
- 2 c. water
- 1 1/2 tbsp. wine vinegar
- 2 c. chicken stock
- 1/2 stalk celery, chopped
- 1 sm. onion, chopped
- 1 sm. green pepper, seeded & cubed
- 1/4 c. yellow turnip, peeled & diced
- 1 tbsp. fresh parsley
- 1 bay leaf
- 1/2 c. spaghetti noodles, broken
- 1 c. canned salt free tomatoes
- 2 teaspoon salt free tomato paste
- 1/2 teaspoon dry thyme
Directions
- Place meat and water in large pot. Bring to boil and cook, uncovered for 5 min. Add in stock, vegetables, garlic, parsley and bay leaf. Bring to simmering, cover and simmer 1 hour. Add in remaining ingredients, cover and simmer for 30 more min. Stir and let stand uncovered for 10 min before serving. Makes 6 servings. Each serving equals approximately 125 calories.
