  • Hearty Beef N' Potato Casserole

    Ingredients

    • 4 c. (15 ounce.) frzn potato rounds
    • 1 pound grnd beef
    • 1 (10 ounce.) pkg. frzn minced broccoli, thawed
    • 1 (2.8 ounce.) can Durkee French fried onions
    • 1 med. tomato, minced (optional)
    • 1 (10 3/4 ounce.) can condensed cream of celery soup
    • 1/3 c. lowfat milk
    • 1 c. (4 ounce.) shredded Cheddar cheese
    • 1/4 teaspoon garlic pwdr
    • 1/8 teaspoon grnd black pepper

    Directions

    1. Place potatoes on bottom and up sides of 8 x 12 inch casserole. Bake, uncovered, at 400 degrees for 10-15 min. Brown beef in large chunks, drain. Place beef, broccoli, 1/2 can French fried onions and tomatoes in potato shell. Combine soup, lowfat milk, 1/2 c. cheese and seasonings, pour over beef mix. Bake covered at 400 degrees for 20-25 min. Top with remaining cheese and onions. Bake uncovered 2-3 min longer. Serves 6.
