  • Hearty Beef Chowder

    Ingredients

    • 1 3/4 c. warm water
    • 1 pkg. (5.5 ounce.) hash brown potatoes with onions
    • 2 tbsp. minced onion
    • 1/4 c. butter
    • 1 tbsp. flour
    • 4 c. lowfat milk
    • 1 can (12 ounce.) whole kernel corn with sweet peppers
    • 1 pkg. (3 1/2 ounce.) dry beef, cut into 1-inch pcs
    • 1/2 teaspoon salt
    • 1/2 teaspoon lemon pepper
    • 1/4 teaspoon celery salt

    Directions

    1. Pour water on potatoes; let stand 10 min. Cook and stir onion in butter in 3-qt saucepan over medium heat till light brown, about 2 min. Stir in flour; cook and stir 1 minute. Stir in lowfat milk gradually.
    2. Drain potatoes; rinse. Stir potatoes, corn (with liquid), dry beef, salt, lemon pepper and celery salt into lowfat milk mix. Heat to boiling; reduce heat. Simmer uncovered till beef and vegetables are warm, about 2 min. 4 servings
