Healthy Mustard Greens Soup
This is a great and simple dish to make on cold nights. Ingredients
- 2 cloves chopped garlic
- 1 tsp chopped ginger
- 1 medium onion, chopped
- 2 tbsp olive oil
- 1 package mustard greens
- 2 cups prepared garbanzo beans
- 1 medium tomato
- 2 cups vegetable broth
- 1 cup water
- 1 tbsp peanut butter
- 1 tsp soy sauce
Directions
- Saute onions, garlic and ginger in oil over medium heat in soup pot
- Add greens, tomato, and beans and cook for 2-3 minutes
- Add soy sauce and stir in thoroughly
- Add broth, water and peanut butter and bring to boil
- Cover and simmer for 15 minutes
- Add salt, pepper and chili to taste
