    Ingredients

    • 1.5 cup all purpose flour
    • 1.5 cup wheat flour
    • 1 teaspoon salt
    • 2 teaspoons baking soda
    • 2 teaspoons baking powder
    • 1.5 Tablespoons cinnamon
    • 2 teaspoons ground ginger
    • 2 teaspoons ground nutmeg
    • 22 ounces pumpkin puree
    • 2/3 cup nonfat greek yogurt
    • 1/2 cup canola oil
    • 1/2 cup nonfat milk
    • 4 eggs
    • 1 cup raisins
    • 2/3 cup chopped almonds
    • 1/2 cup molasses
    • 4 tablespoons maple syrup

    Directions

    1. Preheat oven to 350 degrees F. Line muffin pans with muffin liners. Whisk together flour through nutmeg in a medium sized bowl. In a separate bowl whisk together pumpkin through eggs. Stir flour mixture into wet ingredients. Add raisins and almonds and combine. Fill muffin cups 2/3 full and bake for about 20 minutes or until toothpick comes out clean.
