  • Hazelnut And Chocolate Oat Cookies

    Ingredients

    • 200 gm hazelnuts minced
    • 150 gm good plain chocolate
    • 200 gm butter
    • 200 gm pale muscovado sugar
    • 2 x Large eggs
    • 1 tsp vanilla essence
    • 200 gm self raising flour
    • 1 tsp salt
    • 200 gm porridge oats
    • 5 Tbsp. lowfat milk

    Directions

    1. Coarsely chop the hazelnuts and chocolate and set on one side.
    2. Cream together the butter sugar and Large eggs.
    3. Mix in remaining ingredients till just proportionately mixed.
    4. Place large Tbsp. of the mix on a baking tray.
    5. Bake on the grid shelf on the floor of the roasting ovenwith the cool plain shelf or possibly roasting tin on the second runners above.
    6. Cook for 10 to 13 min turning the tray round after the first 7 to 8 min to ensure even cooking.
    7. Then transfer to the simmering ovenfor a further I S min till well cooked and cold on the baking tray.
    8. Bake on the third runners of the baking ovenfor 12 to 15 min turning the tray round after 8 to 9 min.
    9. Freshly baked biscuits are so special and delicious so keep a bag of ready to bake cookies in the freezer and avoid the temptation to nibble.
